Hot and Smoky Double Bacon Chili Dogs

Are you craving that smoky campfire scent and the taste of dinner grilled over an open flame? Start with a beef dog, add some bacon, smoky chili, and cheese, and you've got the perfect chili dog recipe. Dive in and let the hot, smoky goodness melt across your tongue.

Hot dogs on the grill is a classic summer dinner. Adding this smoky chili with a hit of El Yucateco Mexican hot sauce will elevate an ordinary dinner to a grilling favorite.


I'm a sucker for a warm, flickering campfire, so El Yucateco's Black Label Reserve Habanero Sauce is my favorite Mexican hot sauce. I love the other flavors, but there's something about that rich, smoky heat that brings back a flood of happy summer memories.


These chili dogs encapsulate that smokiness and raise the culinary bar. Crispy bacon and an all-beef dog are just the beginning. The blend of spices and hot sauce in the chili brings everything together, especially that tiny little hint of cinnamon.


Once you try these, you'll never top your chili dogs with anything out of a can ever again.


Double Bacon Chili Dogs

Ingredients:

  • 12 all-beef hot dogs

  • 12 slices of bacon

  • 12 hot dog buns

  • 1/2 white onion, chopped

  • finely shredded cheddar cheese

  • yellow mustard

Smoky Chili:

  • 6 slices of bacon

  • 1 white onion, chopped

  • 1-2 cloves minced garlic

  • 1 1/2 lb ground beef

  • 1 Tablespoon chili powder

  • 2 teaspoons paprika

  • 1 teaspoon black pepper

  • 1/4 teaspoon cinnamon

  • 1/4 teaspoon salt

  • 2 oz El Yucateco Black Label Reserve Habanero Sauce

  • 2 teaspoons cider vinegar

  • 15 oz tomato sauce


Instructions:

Start the smoky chili by adding chopped bacon to a lightly greased frying pan over medium heat. Once the bacon fat has started to melt, add chopped onion and garlic and continue cooking. As the onion just starts to soften, add the ground beef and all dry spices (chili powder, paprika, black pepper, cinnamon, salt). Break up the meat and stir everything until evenly combined in the skillet. Then, add the El Yucateco Black Label Reserve Habanero Sauce and mix well. Add the cider vinegar and tomato sauce and stir. Simmer for 10 minutes to let the flavors combine. Taste and adjust seasonings as needed.


Wrap each hot dog with a strip of bacon, starting at one end and wrapping diagonally toward the other end, like a bacon-y candy-cane. Secure each end of the bacon with a toothpick. Place all bacon-wrapped dogs on the grill over indirect heat (250°F) for 25 minutes. You want the bacon to have a chance to get nice and crispy while the hot dog stays juicy. Check on them periodically and adjust heat or grill placement as needed to avoid burning. When the bacon is crisp and brown, pull the dogs off the grill and remove all the toothpicks (don't forget!!).


Assemble your chili dogs by placing one bacon-wrapped dog on a bun and spooning smoky chili over the top. Add onion, mustard, and cheddar cheese to taste and enjoy!


Tips and Tricks:

If you're concerned about the chili being too spicy, try adding only 1 oz of El Yucateco Hot Sauce (or even less) at first. Once all the chili ingredients are combined and simmering, taste the mix and add more habanero hot sauce until it's the perfect heat level for you and your crew.


You can use raw spaghetti instead of toothpicks to hold the bacon in place on the hot dogs. That way, no one bites into wood if you miss removing a skewer.


Since the bacon-wrapped dogs take a while to cook, you can start the dogs on the grill, then cook up the chili to be ready as the dogs finish cooking. However, the chili can also be prepared ahead of time if it's more convenient. Reheat it gently on the stove, and it's good to go.


If you don't want to light up the grill, these bacon dogs cook just as well in the oven. Make sure you arrange them over some kind of tray with a lip to catch any bacon drippings.
